Vegan fried mac and cheese

A while back I ran across this recipe for vegan baked macaroni and cheese. I never cared for macaroni and cheese pre-vegan, but her version looked amazing! I wanted to make it immediately, but we were preparing for our big move during that time so I saved the recipe for later. I came across it today and thought it was the perfect time to make it. I had everything on hand so there was nothing holding me back.

I copied her recipe exactly how she had it except for the ham slices. I left that part out. It was SO yummy! The only problem is that I had quite a bit left over. Then I got an idea. I chopped up a few smallish squares and froze them for a few hours. Then I dredged the squares in flour, then in a soy milk/cornstarch mixture and then in some seasoned panko. Then I fried those bad boys and served them with some marinara sauce. Pretty freaking delicious if I do say so myself. I suppose you could use another baked macaroni and cheese recipe, but I’ve got to be honest. I’ve tried LOTS of different versions and none compare to this one. It’s spot on! Give it a try!

My brain just exploded. I didn’t think you could improve on plain ol’ mac and cheese…but this…this looks TREMENDOUS!

 

Ha! I knew when I saw the title– that this had to be a recipe from the midwest! I once had this at a vegan superbowl party in chicago (where I’m from!) and it. blew. my. mind! Thanks for the recipe!!! :)

@The Voracious Vegan: Hehehe. I couldn’t wait to try this out. My husband ordered something like it at The Cheesecake Factory once when we went for drinks. I have to admit I was drooling just a little. I just had to veganize it.
