Jelly Doughnuts

Makes: About 1 — 1 1/2 dozen doughnuts (depending on the size of your cutter)

Ingredients

  • 2 1/2 — 3 cups flour
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 3/4 cup non-dairy milk
  • 3 tablespoons vegan butter
  • 1 packet active dry yeast
  • 1 egg replacer (I used Ener-G brand)
  • oil for frying
  • confectioners’ sugar
  • the most awesome jelly you can find

Directions

  1. In a small saucepan, mix together the non-dairy milk, butter and sugar. Heat on low until the butter has melted. Make sure the mixture doesn’t boil. You don’t want the mixture to get too hot. You just need it to get warm enough so that the butter melts. Allow the milk mixture to cool slightly. You want it to be hot, but not too hot because then you’ll kill the yeast.
  2. Add the packet of yeast. Set aside.
  3. Combine salt and 2 cups of the flour in a large mixing bowl.
  4. Prepare egg replacer and add that and the milk mixture to the dry ingredients. Mix all ingredients together adding the rest of the flour a little at a time.
  5. Turn the dough onto a lightly floured surface and knead until the dough is no longer sticky.
  6. Place dough in a lightly oiled bowl, cover with plastic wrap and place in a warm spot to rise for at least one hour.
  7. Once the dough had doubled in size, turn it onto a lightly floured surface and knead for a few minutes.
  8. Now you need to shape the doughnuts. There are a few ways to do this. a) Pinch off a golf ball sized piece of dough and flatten into a 1/2 inch circle with your hands. b) Using a rolling pin, roll the dough out 1/2 inch thick. Using a doughnut/biscuit/cookie cutter or the rim of a glass, cut out as many doughnuts as you can. Place doughnuts on a cookie sheet lined with parchment paper and place in a warm spot to rise for another hour.
  9. Pour some vegetable oil in a large pot and heat on medium. Once oil is fully heated, place doughnuts 2–3 at a time into the pot. Fry on each side until golden brown. You may want to stand over the pot and flip the doughnuts periodically making sure that they don’t burn.
  10. Place doughnuts on a plate lined with paper towel and allow to cool.
  11. Once the doughnuts have completely cooled, coat with confectioners’ sugar.
  12. Fill a small squeeze bottle with jelly. Using the tip, dig a small hole on the side of the doughnut and fill.

Notes: Your jelly doughnuts are only going to be as good as your jelly. So you might want to splurge and get the good stuff. If you can make your own, even better! Feel free to send some my way. :)
