Ice cream sandwiches

Now that the staples are out and I’m finished with those dreadful antibiotics I’m beginning feeling a lot more like myself. I still can’t resume my usual exercise routine which really sucks, but I am able to do my usual day-to-day activities. So last week I hopped into the kitchen and whipped up a little treat for me and the monkey (the monkey = my son in case you didn’t know). He helped me bake the chocolate chip cookies and when they finished cooling I popped them in the freezer for about 1/2 hour. Once they were good and frozen I took a hefty scoop of semi-thawed So Delicious Cookie Dough Coconut Milk Ice Cream and sandwiched it between two of the cookies. I used a frosting spatula to even out the ice cream a bit. Afterward I popped them in an airtight container and froze them over night.

The ice cream was nice and creamy. It did taste coconutty, but it paired well with the chocolate chip cookie. It was a nice balance of coconut and chocolate chip flavor. They were great and exactly what I needed after a long hard week. Also, the monkey gives them two thumbs up.
