Homemade doughnuts

For those of you that don’t know, my father is visiting from out of state. He’s going to be staying for the holidays. Anyway, my father loves him some sweets. Every time we go to the market he goes straight for the doughnuts. I wouldn’t really care so much, however, my son will sneak a few in when I’m not looking. I’d rather he didn’t eat those horrible chemical cakes. So… I made my own.

I used my very own jelly doughnut recipe as a base and made a variety of different doughnuts. I made a few jelly filled, some chocolate frosted with sprinkles and some cinnamon sugar. I know that no matter what a doughnut is still a doughnut and definitely not good for you. But at least I know what the heck is in my homemade version.

I wish I had some new photos to share with you all, but these doughnuts seriously did not last long enough for me to take a few photos. My super picky father LOVED them and can’t wait until I make more. He’s usually freaked out by the stuff I make because he knows that I don’t use dairy or egg and he’s left wondering HOW that’s possible lol. Next up… garlic bagels. Yes, he requested my vegan version. Although he’ll probably ruin it by adding dairy based cream cheese. I’ll suggest he use the Tofutti. Baby steps.

Southern Comfort caramel apple pie

After coming across this recipe for Southern Comfort Caramel Apple Pie I just knew that I HAD to make it. It’s an extremely easy recipe to veganize. The only real changes I made was the use of vegan butter instead of regular butter, 1/2 cup Southern Comfort instead of 3/4 cup and 3/4 cup plain almond milk instead of 1/2 cup heavy cream. I would have used soy creamer, but I only had enough for my morning cup of coffee and there was no way in hell I was parting with it.

This apple pie was AMAZING! I know mine doesn’t look exactly like the original, but this pie isn’t all about looks. It was delicious! I’m going to have to go to the market tomorrow for some vegan ice cream. That’s seriously the ONLY thing this pie was missing. I’ve tried lots of different versions of apple pie, but this one… this one is full of win. Even my hard-to-please father enjoyed it. He gave it a 10 and coming from him that’s big. This bad boy is definitely a keeper.

Pumpkin kick

I’ve been on a bit of a pumpkin kick lately. I usually don’t start with the pumpkin until October, but what can I say? I’m so over summer and can’t wait for Fall. Whipping up some of my favorite Fall recipes is a nice way to get ready. I’ve already made about a dozen things, but these Pumpkin Chocolate Chip Cookies are my favorite so far. I only made a few changes. I used one flax egg, only a 1/2 tsp baking soda, 1 tsp baking powder and left out the cloves. They were delicious! I’ll definitely be making these a lot during these next few months. Especially since Ethan loves them so much.

A few things I have planned… the perfect pumpkin pancake, pumpkin scones, pumpkin ravioli, pumpkin quesadillas, pumpkin cheesecake and a homemade version of Starbucks famous Pumpkin Spice Latte.
