One of the things I miss the most about living in New Jersey is how easy it is to come across delicious vegan goodies. I first had a vegan Bacon Cheddar Scone from Sweet Avenue Bake Shop quite some time ago. It was so good that I would stalk their Twitter account just waiting for the day that they’d make them again. Now that I’m all the way over here there’s no way of getting my hands on one of those delicious scones again. Unless of course I make them myself.
Last night I made the guys some Loaded Potato Quesadillas. I had lots of left over bacon and cheddar so I decided it was the perfect time to try making those scones. It was pretty easy and they turned out GREAT. However, they were nowhere near as yummy as the ones I remember. It wasn’t a bad first attempt though. I’ll definitely give these another go sometime in the near future. If you have a recipe you’d like to share it would totally make my day. Even if it’s not vegan. I’m sure I can easily veganize it myself.
This is the recipe I used today. I used Lightlife Smart Bacon and Follow Your Heart Cheddar Cheese.
