In case you didn’t already know, I love me some eggplant. I remember shortly after going vegan someone told me that eggplant parmesan tastes just like chicken parmesan. I was hooked on the first bite. I’ve experimented with eggplant a bit in the past. One of my all time favorites being my Eggplant Meatballs. Then there were the burgers, sliders, eggplant parmesan ‘lasagna style’, and I still have to give these eggplant carnitas tacos a go. See? I told you. I LOVE eggplant!
The one thing I never thought to do? Turn a delicious eggplant into veggie fries! Well, while I was doing my grocery shopping last week these Dominex Veggie Fries caught my eye. I personally think they make a nice light yet satisfying lunch. I usually bake them a little longer than the instructions call for on the box. I like them nice and crispy. Then I serve them with a tablespoon or two of my favorite marinara sauce. Seriously good stuff! It’s sort of like eggplant parmesan, but in finger form.
Dominex has a few other vegan options. The Eggplant Cutlets are pretty awesome! You can easily whip up an eggplant parmesan sandwich in as little as 20 minutes! No need to do all the peeling, slicing, and breading. As much as I love eggplant sometimes I just don’t have the time for it. These cutlets have come to the rescue quite a few times! I haven’t tried the Vegan Burgers yet. But it’s on my to-do list! If you’ve tried them, leave me a comment telling me what you think!
